The Croissant is the larger, softer end of the hand rest range. The curved form supports the whole forearm rather than just the wrist, which changes how long a client can hold still: an unsupported forearm starts to shake after twenty minutes, and that is when filing gets imprecise.
For the technician the benefit is the same as any hand rest. The client's hand stays at working height, so you are not bending down to follow it through a full set.
